Humberto "The Chori-Man" Raygoza, is a 4th generation artisan chorizo maker. After years of learning his craft from his father and uncles back in Zacatecas, Mexico, he launched The Chori-Man in Los Angeles, with the mission of providing the best artisan chorizo in the tradition of his family. Raygoza makes four flavors of chorizo: Zacatecano Red - based on the family recipe with Guajillo Chile, Tolucan Green - a southern Mexican style flavored with Poblano Chile, Argentinian style - flavored with garlic, fennel, and wine, and Raygoza’s own creation, Maple Habanero - a sweet and spicy chorizo.
